Light Pumpkin muffins
Made these last night and they are delicious! Make sure you grease the cupcake liner though! I also threw a few chocolate chips on top! Yum!

1 cup sugar
1/2 cup applesauce
1/2 cup light margarine spread
2 eggs
2 cups whole-wheat flour
1 teaspoon baking soda

I changed the recipe a bit. I used 1/2 c white sugar and 1/2 c brown sugar. I also used a stick of butter (1/2 cup) instead of the oil. I used my regular cookie method of mixing....cream butter and sugar, add egg, vanilla, pumpkin. Then dry. Chips last. I used milk chocolate chips. I also added 3 drops of red food coloring like one reviewer said and the color was a nice orange. I omitted the milk.
Ingredients
1 cup canned pumpkin
1 cup white sugar
1/2 cup vegetable oil
1 egg
2 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon milk
1 tablespoon vanilla extract
2 cups semisweet chocolate chips
1/2 cup chopped walnuts (optional)
Directions
Combine pumpkin, sugar, vegetable oil, and egg. In a separate bowl, stir together flour, baking powder, ground cinnamon, and salt. Dissolve the baking soda with the milk and stir in. Add flour mixture to pumpkin mixture and mix well.
Add vanilla, chocolate chips and nuts.
Drop by spoonful on greased cookie sheet and bake at 350 degrees F (175 degrees C) for approximately 10 minutes or until lightly brown and firm.Mom of 3, Veterinarian

I made the pumpkin chocolate chip cookies last night and although they tasted amazing they didn't really resemble cookies. I don't know if I messed up the baking powder/soda thing (I didn't put in the milk either) but they didn't really flatten out like I expected. They were more like small pumpkin chocolate cakes than cookies. Like I said they tasted awesome and I want to make them again but I was wondering if you had any suggestions to fix the lack-o-rising issue. Thanks!

I made some pumpkin choc chip cookies today. Really yum! The recipie I used was a little different than the one Michele used. My only issue is that when stacked, they stick together. After I discovered this I layered them between layers of wax paper & it seems to work. Regarding the puffiness of the cookie - although they are more cake like- mine turned out flatish. I attribute it to two things which I read about in the comments and adjusted for. I used half the baking soda (not any powder) then decreased the amount of flour. I also increased the pumpkin a bit. This probably helped too. I can post the version of the recipie if desired.Wife to Hand Surgeon just out of training, mom to two lovely kittys and little boy, O, born in Sept 08.

Here it is. It make about 3 doz 3inch round cookies. You could half it too. Before this try I'd never had unpuffy pumpkin cookies. Both types are yummy - these just look more like a regular cookie. The recipie also added ginger (1 tsp) but I left it out. I also used milk chocolate chips.
Pumpkin Chocolate Chip Cookies
1 cup unsalted butter, softened
1 cup white sugar
1 cup brown sugar
2 large eggs
1 tsp vanilla
2 cups pumkpin puree
3 cups flour
1 tsp baking soda
1/2 tsp salt
1 1/2 tsp ground cinnamon
1/2 tsp nutmeg
2 cups chocolate chips
1 cup chopped walnuts (optional)
Heat the over to 350F. Line cookie sheets with parchment paper.
Beat butter and sugars until light/smooth. Beat in eggs, one at a time. Mix in vanilla and pumpkin. Stir in flour, salt, baking soda, spices. Stir in chocolate chips and nuts.
Scoop dough by heaping tablespoons onto cookie sheets. Bake for 15-17 minutes until the cookies are browned around the edges. Remove cookies from oven and let rest a few minutes before removing to cooling rack.
