Lobsters, they were on sale. I love that they're so easy to make and don't require defrosting. I'm tempted to go back tomorrow and get more.

Me too! My husband abandoned me last night to go to a fancy schmancy pre-interview dinner for the department and I was stuck at home sick as a dog with nothing in the fridge.
Embarrassingly enough I did drive thru in my pjs. At least I removed the tissue that was stuck up my nose....

Stoped cooking when BabyK was born. Seriously, dinner has been random for a year and will probably remain so until Baby2 goes to college.

We had ditilini with white beans, broccoli, garlic & parm cheese. We have a similar combo often. I'm kind of sick of it but it's fast, easy and covers all bases.

I bought some salmon for tomorrow. Any suggestions for cooking/serving? I usually bake it in the oven in a tinfoil packet with basil and a little olive oil. It's good but I really want something different.

I like salmon with old bay, olive oil, garlic, and lemon juice. I marinate for about an hour then pan grill. Servve with couscous and steamed asparagus or broccoli.

MrsK, I'm so glad to hear that! I feel like it's a huge accomplishment some days to make a Buitoni skillet dinner and open a bag of salad. DH is a good sport...

Last night was steamed veggies, quinoa, and chicken breast in a brandy leek sauce. One of my favorite dishes.

I found a marinade on epicurious for the salmon that was made of 1/3 cup maple syrup & 1/4 cup soysauce with some garlic. I marinated it for an hour then baked it in the oven for about 20min at 425. The rest of the marinade was to be reduced on the stove & then poured over the cooked fish. I accidently over boiled the marinade so couldnt use it. The fish was really nice & would have been more delish if I didn't ruin the sauce. I made mashed potatoes & sautéd some yellow squash & zucchini with garlic as sides.

We had trader joes gift cards. We bought a garlic pizza crust dough, trader joes pizza sauce and some cheese. We doctored it with garlic and other spices. Its currently in the oven. Hopefully its yummmmy.

Culver's single deluxe butter burger and fries. Yum!

Cooking has taken a backseat during this interview season. I don't think I've cooked anything other than pasta and eggs since Thanksgiving.

                                Into the slow cooker goes:

                                Bag of lentils
                                Some chicken breasts
                                Bottle/jar of curry sauce
                                Curry spices
                                Garlic
                                Chopped onion
                                Salt
                                Box of butternut squash soup

Cook until the chicken becomes shreddable, serve over rice.

Mostly I just wanted to say that now every time I use the spice jar just labeled "curry" I think of Jenn P's MIL saying "that's not right." (I may be paraphrasing.) I always think "Sorry, Mrs. P" as I'm duuummmmping it in.
