      Hubby made up a recipe last night for slow-cooker lasagna. It is super yummy and way faster prep than normal lasagna (you don't have to pre-cook the noodles). Let me know if anyone wants it.

          Okie dokie. I hope you like it! Next time I think we are going to toss in black olives, but we didn't have any in house.

          From DH: Slow-Cooker Lasagna
          -----------
          Approximate prep time (by an actual human): 1 hour. Total time: 5 hours.
          Serves 8ish

          Ingredients:
          1 jar (approximately 3 C or 24 oz) pasta sauce
          1 14-oz can diced tomatoes
          1 onion, minced
          1 bell pepper, finely chopped
          1 T olive oil
          1 lb mushrooms, sliced
          1 T tomato paste
          4 cloves garlic, crushed
          2 lbs lean ground beef
          1 t dried oregano
          1 t dried basil
          1 T low sodium soy sauce (yes, it seems weird. Trust Cooks Illustrated on this one).
          15 oz ricotta cheese (low fat)
          3 cups shredded mozzarella cheese (12 oz)
          1/4 C grated parmesan
          1/4 C chopped basil
          1/2 lb frozen chopped spinach
          1 package lasagna noodles

          In a nonstick skillet, saute the onion and bell pepper in the olive oil until softened (about 5 minutes). Add the mushrooms and cook until they release their liquid. Add the garlic and tomato paste and cook, stirring constantly, about 1 minute. Set aside. In a stockpot or dutch oven, cook the meat until no pink remains. Tilt the pan and skim fat from the liquid if necessary. Stir in the vegetables, scraping any browned bits from the bottom of the pan. Add the tomatoes, pasta sauce, basil, oregano, and soy sauce. Return to simmer, and season to taste with pepper (approx. 1/2 t). Remove from heat.
          Stir together the ricotta, basil, and parmesan in a bowl.
          Spray the slow cooker pot with nonstick spray. Spoon some of the tomato sauce into the bottom, then place over it a layer of lasagna noodles, breaking them as needed to fill gaps. Over the noodles, crumble a layer of ricotta mixture, sprinkle a layer of mozzarella and a layer of spinach, and spoon another layer of tomato sauce. Repeat until the ingredients are used up or the slow cooker is filled, ending with tomato sauce.
          Cook on low for 4 hours.
          Sprinkle a layer of mozzarella over the top and replace the lid, allowing the cheese to melt.

            LOVE my slow-cooker. I use it a lot for soups and stews. It's so nice to throw something in early in the day and have it ready to go when we're coming back in from Karate or gymnastics!

            It's sort of like fajitas in a crockpot. And I've made it with chicken breasts instead of beef and it's just as yummy (don't cook it as long, the chicken dries out easily)

              I made this today for a taco dinner at it was delicious. It was exciting to get to use my brand new crock pot and the apt smelled SO GOOD.

              1 Cup chicken broth or water (Make sure it’s gluten-free. We use Pacific brand.)
              1 Cup salsa or picante sauce
              Directions:
              1. Place chicken in a slow-cooker and sprinkle taco seasoning mix on top of chicken. Then, pour on chicken broth and picante sauce. No need to stir.
              2. Cover, and cook on low for 8 hours.
              3. After 8 hours, the chicken is so tender it usually falls apart with a fork. So, use forks to shred, or pull apart, the chicken. Stir it around and let it stay warm in the slow-cooker while you prepare the rest of dinner.

                    You should have her do the mexican style slow cooker meat, perfect for tacos, taco salads, enchiladas, or just eating straight from the crock pot because you can't help yourself. Fantabulous as well. She is an awesome cook. I would weigh 300 pounds if I lived close to her.

                              I've been a little obsessed with my crock pot lately, so I'm glad to have found this thread! I will have to try that lasagna recipe, and at least one of the chicken recipes. I'm not very confident when it comes to cooking meat, because I'm very inexperienced, and it always seems easier with the crock pot.

                              Maybe this has already been posted - since I'm the newbie here and there have been many slow cooker threads - but my favorite resource is http://crockpot365.blogspot.com/, A Year of Slow Cooking. There are hundreds of recipes, categorized, with something for everyone. I've made several recipes from the site and my SO and I loved the vast majority of the ones we tried. (Mulligatawny soup, jalapeno corn pudding, beef stew, apricot brie topping, quinoa casserole, etc.) Yesterday I made FALAFEL in the crock pot!! I was shocked that it actually worked.
