I love Cooks Illustrated, but am relatively new to adapting recipes. Bummer, but it's the way it goes. Please, let me know how it goes, I'm sure the allergy kid will be happy to partake (and his parents will be touched, I know I am!)

I'll report how they turn out. I' ve never made frosting with shortening before so they shouldn't be any softer than what I'm used to. There is something about shortening that just seems wrong. Crystal - you're right. I forgot to mention that part!! Thanks. I want to say Duncan Hines has several flavors that are completely dairy free, but definitely check the ingredients.
Also, it is pretty typical for teachers of children with allergies to not let them have anything homemade just to be safe. I always had the parents of the child bring special "birthday" treats that i would store and pull one out when the other kids had the bday cupcakes. You might want to ask the teacher?

That's a good point too CM. I'd call the teacher and see if that's a possibility. I know some schools don't allow it because some parents get all uppity about their kid feeling left out. Because that's obviously more important than your child going into anaphylactic shock. Sorry, tangent.I'm just trying to make it out alive!

The school stated in there handbook that treats for bdays are encouraged & to bring something plain for the allergic kids if you can't/don't want the treat/snack to be allergy free. They also stated that you need to provide food packaging or ingredient lists if homemade.
O & another kid have the same bday so us moms are both bringing cupcakes. We choose different kinds to bring but she's not doing allergy free. She said today when I told her that I was making it allergy free she said "good! So those kids can eat yours!" Classy!
I also checked & the allergy is all dairy, not just milk. I did find salt free Earth Balance margarine sticks at Sunflower market to use. If the frosting turns out weird I'll just not frost them or leave a few unfrosted. Wanted to let you all know I found a frosting mix at Trader Joes that requires no milk & has no dairy in it. It asks for butter & I'll use earth balance for that. I got supplies to use soy milk but think I'll use the mix.Wife to Hand Surgeon just out of training, mom to two lovely kittys and little boy, O, born in Sept 08.
