    I love Cooks Illustrated, but am relatively new to adapting recipes. Bummer, but it's the way it goes. Please, let me know how it goes, I'm sure the allergy kid will be happy to partake (and his parents will be touched, I know I am!)

      That is really gross!

      I'll report how they turn out. I' ve never made frosting with shortening before so they shouldn't be any softer than what I'm used to. There is something about shortening that just seems wrong. I just don't want to use it.

        You can also make a sprite cake. It is literally the box of powder mix from the store and 10 oz of sprite. Nothing else so it's safe for milk and egg allergies. The cake ends up thicker, but still pretty good.

          CM - I wouldn't trust boxed cake mixes unless they are labeled vegan. Most say on the back that they contain milk or egg powders. (Just FYI)

            Crystal - you're right. I forgot to mention that part!! Thanks. I want to say Duncan Hines has several flavors that are completely dairy free, but definitely check the ingredients.

            Also, it is pretty typical for teachers of children with allergies to not let them have anything homemade just to be safe. I always had the parents of the child bring special "birthday" treats that i would store and pull one out when the other kids had the bday cupcakes. You might want to ask the teacher?

              That's a good point too CM. I'd call the teacher and see if that's a possibility. I know some schools don't allow it because some parents get all uppity about their kid feeling left out. Because that's obviously more important than your child going into anaphylactic shock. Sorry, tangent.

                The school stated in there handbook that treats for bdays are encouraged & to bring something plain for the allergic kids if you can't/don't want the treat/snack to be allergy free. They also stated that you need to provide food packaging or ingredient lists if homemade.

                O & another kid have the same bday so us moms are both bringing cupcakes. We choose different kinds to bring but she's not doing allergy free. She said today when I told her that I was making it allergy free she said "good! So those kids can eat yours!" Classy!

                I also checked & the allergy is all dairy, not just milk. I did find salt free Earth Balance margarine sticks at Sunflower market to use. If the frosting turns out weird I'll just not frost them or leave a few unfrosted. Exclusion sucks & I don't want anyone to feel left out.

                  ((big hug!!!)) Just saying. And the attitude of the other mother - super common. There is a LOT of ignorance and anger directed toward allergies, it isn't the kid's fault.

                    I know! It's not like the kid is just picky & choose to be allergic to a common food stuff. It makes things harder but not impossible.

                      Wanted to let you all know I found a frosting mix at Trader Joes that requires no milk & has no dairy in it. It asks for butter & I'll use earth balance for that. I got supplies to use soy milk but think I'll use the mix.
