Butternut squash sounds so great in theory until you realize that you only know one good recipe for it: butternut squash soup. Or maybe that's just me. Hit me up with your best recipes other than soup.

I've roasted it & mashed it up with butter & brown sugar. Sooo good! I too need more suggestions for use. Think I might use some in place of pumpkin for muffins.Wife to Hand Surgeon just out of training, mom to two lovely kittys and little boy, O, born in Sept 08.

I had a craving for butternut squash last week, so I made this on Friday: http://www.marthastewart.com/332311/...butternut-soup. I wanted soup, but I didn't want to go through the hassle of using a blender. It was really easy to make, and tasted pretty good, although I think the chicken could have used more seasoning than the recipe calls for.
Oh, and we've also made this: http://www.marthastewart.com/329031/...quash-meatloaf. I don't really make meatloaf all that often and this was awesome; I used ground turkey instead of pork (and I think maybe I cut back on the red pepper flakes? Not sure on this, as DH considers them another food group, lol). I seriously forgot about this recipe and I think I will be making this next week.
And finally, this recipe: http://www.marthastewart.com/313662/...-ricotta-pizza. Made this once and it was really good, just a lot of prep work to get to the final product.
