  • Butternut squash recipes

    Butternut squash sounds so great in theory until you realize that you only know one good recipe for it: butternut squash soup. Or maybe that's just me. Hit me up with your best recipes other than soup.

    DH is making it into risotto tonight, I'll have to report back.
    Wife to NSG out of training, mom to 2, 10 & 8, and a beagle with wings.

      I am all ears. I just put 17(!) squash into storage in from our garden this summer. I need to figure out more ways than just steamed to eat it.

        We roasted & cubed the BN Squash and made butternut and chicken enchiladas...they were really yummy!!

          You can use as a substitute in pumpkin dishes and desserts.

            We do this a lot and it's so good! We also just roast it, scoop and serve. You can also cube and bake it with a little brown sugar, nutmeg and butter.

              I've roasted it & mashed it up with butter & brown sugar. Sooo good! I too need more suggestions for use. Think I might use some in place of pumpkin for muffins.

                We made something like that once, awhile back. It was pretty awesome. You could also make a butternut squash ravioli with a sage-and-brown-butter sauce. Yum. I've also made it in risotto, as Tenacious_D suggested, sooo good!

                I had a craving for butternut squash last week, so I made this on Friday: http://www.marthastewart.com/332311/...butternut-soup. I wanted soup, but I didn't want to go through the hassle of using a blender. It was really easy to make, and tasted pretty good, although I think the chicken could have used more seasoning than the recipe calls for.

                Oh, and we've also made this: http://www.marthastewart.com/329031/...quash-meatloaf. I don't really make meatloaf all that often and this was awesome; I used ground turkey instead of pork (and I think maybe I cut back on the red pepper flakes? Not sure on this, as DH considers them another food group, lol). I seriously forgot about this recipe and I think I will be making this next week.

                And finally, this recipe: http://www.marthastewart.com/313662/...-ricotta-pizza. Made this once and it was really good, just a lot of prep work to get to the final product. I'm not too good with pizza dough, so this is perhaps why we haven't revisited this recipe.
