    Similar to Zuppa Toscana, but better. I like the spices they use and cooking down the kale before adding the liquid.

              I think we'll do butternut ravioli (from frozen) with maybe a quick basil pesto, and a side of pattypan squash (my garden has an abundance of it.)

                Roasted a large pork shoulder in the crockpot a couple weeks ago and froze the leftovers. So tonight we had yummy leftover shredded pork tacos with a last minute thrown-together salsa made from several roma tomatoes, a red onion and a can of diced fire-roasted jalapenos. 10 minutes. Boom.

                            Call nights I would go very, very bad. As in corndogs or something else that had no nutritional value. DH is a nutrition freak in the house. I wanted to eat without the guilt.

                                I had a salad for dinner last night so I could have some popcorn at the movie. Tomorrow I go in for diet counseling and have to start monitoring my blood sugar, so my week of easing into this GD diet is about over. I'm putting chicken in the crockpot for dinner tonight, and I'll saute some cauliflower and squash to go with it.

                                Side note, because I don't think I mentioned it here, but I did this a couple years ago, and with the new diet restrictions I just rejoined - I subscribe to eMeals, a meal planning service that gives you a week's worth of recipes and a detailed grocery list, and it really makes cooking at home a TON easier when you don't have to think of what you want to eat all week and make sure you get it at your trip to the store. Shameless referral link, in case anybody is interested: http://emeals.com/account/go.php?r=156907&i=l0 I do the family plan even though they have a 2 person plan, because I like the extra options, and I like making enough for leftovers to take for lunch and to eat on days that I don't cook.
