    Summer foods

    Holy deliciousness! We went to Jean Georges for our anniversary last weekend and I fell. in. love. with this yellowfin tuna appetizer. Found the recipe and made it last night for today's lunch (with some substitutions of things I had on hand). It the perfect lunch/dinner on a hot day!

    Changes I made: used about 15oz yellowfin tuna, cut the total olive oil to 3 Tbs, tripled the radishes and daikon (to give it more volume with basically no calories), substituted 2 limes-worth of lime zest for the leaves in the syrup, cut the sugar down to 2 tbs, subbed apple cider vinegar for champagne vinegar (and cut the amount since it's stronger -- replaced with a bit more soy sauce), used chili paste instead of chili oil, used fresh Chinese chilies instead of dried.

    1/4 of the recipe comes out to about 400 calories, 22 grams of fat, 24g carbs, 7g fiber, 32g of protein and is a HUMONGOUS serving. So yummy (and I am normally hesitant about raw fish)!

      I made a marinated cucumber&tomato salad last night, served cold.

              Chicken marinated in olive oil, salt, pepper, and balsamic vinegar. Grilled, with fresh mozzarella melted on top. Then I top it with bruschetta tomatoes.

                Yum, ST we do a version of that as well but add some parm, crushed garlic and dried mustard (of all things) to the marinade as well.

                In that same vein, I made this great, quick caprese pasta the other night. It's a cold pasta dish so it's refreshing, fresh, and great for lunch the next day.

                  We came home from a trip and had freshly sliced queso Manchego, and organic frozen berries blended to a pulp in the Vitamix as a smoothie.

                    Pesto chicken - buy premade pesto (or make your own, if you have that kind of time and energy), put heaping spoonfuls on top of chicken breasts or tenderloins, cook in pan on the stove. I added some cherry tomatoes to it tonight too that were really good.
