    I thought this could be a fun way to get meal ideas and share your healthy or not so healthy eats!

        Lunch was butternut soup and a toasted half bagel, then some leftover pasta with spinach and garbanzos. For dinner, DH has in the crockpot a beef and black bean chili, we'll eat it with local artisan rosemary bread. Nom!

          I kind of feel crappy today - I think E shared her bug with me. I had a Panera sandwich for breakfast, some dry cereal for dinner, random snacks at our sprinkle, and so far I haven't eaten dinner, but I suspect it won't be much, if anything.

            We had a couple of stovetop-grilled Aidells sausages with fingerling potatoes and sautéed asparagus for dinner. Quick and easy.

              We started The Fresh 20 today, so I prepped food for the week for like 2 hours... Then tonight's recipe was pretty complex, turkey and quinoa meatballs with a honey hot sauce glaze, plus roasted and mashed yams with coconut milk, and roasted cauliflower. It was all delicious! There's one other complex meal which we're doing tomorrow, and the others for the week are nice and easy using leftovers and things I've already prepped. Even though it was a ton of work, it was fun to try some new recipes. Hoping I can stick with it long enough to get my cooking habits back and learn some new recipes!

                I needed a smoothie tonight. Hubby was willing to get me something on his way back from going in for a call, but I have no idea how late Smoothie King is open, and I really didn't want to wait, so I actually made one myself with some random fruit we had in the freezer (banana, blueberries, blackberries, and raspberries) with Greek yogurt, milk, and a splash of apple juice. It's better than I thought it would be and totally hits the spot.

                        Marinated pork chops and quinoa topped with a broccoli tapenade. Loving The Fresh 20 so far, I feel like I'm getting my love of cooking back while not having to do the mental work of planning meals. Tomorrow is lime salmon with red lentils and broccoli.

                          Homemade "stir fry" - cauliflower, carrots, green onion, mushrooms with various seasoning and some fresh raw cashews, served with long grain rice. The rice didn't appeal to me, so I had a bowl of seasoned veggies and called it good.

                          DH & DS2 loved it - DS1 boycotted and had some watermelon before bed.

                              We went out to Mexican, so I had the spinach and mushroom enchilada with black beans and rice. The enchilada was kind of bland but some Cholula hot sauce took care of that.
