Oh man, I can't wait until I can have wine again. And margaritas.

We're at the leftovers portion of the week... Tonight was a hash made with leftover turkey meatballs, leftover roasted yams, kale, and bell pepper.

Still liking the Fresh 20 now that you're eating the meals, MSB?

We had basketball until 5:45, so I got home and threw together some white rice and some chickpea "channa masala" -- one of my kids' favorites, and ready in about 20 minutes. Phew! Added a green salad, as we always do...and for one of the three of us, a little "grape juice" rounded things out nicely...

Yep, loving it! Actually tonight's leftover meal was one I really looked forward to. I loved this week's flavor combos. It's a fair amount of legwork, but less mental work than planning my own meals, and a little bit healthier than my recent cooking, and so far less waste because of the limited shopping list. I'm looking forward to seeing what next week's menu is. We modified the order to do the more complex recipes on the weekend, and the easier ones M-W. Thursday and Friday we'll wing it and order pizza or throw together something easy.

I would recommend it to anyone who loves to cook but has fallen into a rut. Definitely not for people who don't enjoy cooking.

Sounds really interesting, MSB! Glad it's working out for you.

For lunch today, I microwaved a sweet potato, then dumped some black beans and hot sauce on it and a teaspoon or so of vegan margarine. So warm and filling! Tonight we have NO kid activities, , so dinner I think will be chicken tacos or burritos or whatever -- I may just make a very small amount of chicken with onions and peppers, and focus mostly on rice and beans and slaw, since I don't need the chicken and my kids don't love it.

This is what happens when you're too tired and pregnant to play with your toddler yourself. She was sitting at her table quietly, so I let her be.

One plus of this city -- good seafood takeout is easy to find.

This reminds me that I need to eat some seafood tomorrow before I leave... I see a shrimp poboy in my future.

                                Lunch!

Corn tortilla, refried black beans, whole black beans, rice, fresh spinach, salsa verde, and a sprinkling of cherry tomatoes and mini bell pepper slices for color.

Dinner will be slow cooker chicken chili from dry black beans (with only one chicken breast for the whole recipe, since that's what I have, and maybe some sweet potato thrown in.) Eat all the black beans!
