Still liking the Fresh 20 now that you're eating the meals, MSB?
We had basketball until 5:45, so I got home and threw together some white rice and some chickpea "channa masala" -- one of my kids' favorites, and ready in about 20 minutes. Phew! Added a green salad, as we always do...and for one of the three of us, a little "grape juice" rounded things out nicely...Alison

I would recommend it to anyone who loves to cook but has fallen into a rut. Definitely not for people who don't enjoy cooking.Wife of PGY-4 (of 6), cat herder, and mom to a sassy-pants four-nager.

Sounds really interesting, MSB! Glad it's working out for you.
For lunch today, I microwaved a sweet potato, then dumped some black beans and hot sauce on it and a teaspoon or so of vegan margarine. So warm and filling! Tonight we have NO kid activities, , so dinner I think will be chicken tacos or burritos or whatever -- I may just make a very small amount of chicken with onions and peppers, and focus mostly on rice and beans and slaw, since I don't need the chicken and my kids don't love it.Alison

Lunch!
Corn tortilla, refried black beans, whole black beans, rice, fresh spinach, salsa verde, and a sprinkling of cherry tomatoes and mini bell pepper slices for color.
Dinner will be slow cooker chicken chili from dry black beans (with only one chicken breast for the whole recipe, since that's what I have, and maybe some sweet potato thrown in.) Eat all the black beans!Alison
