        What are you eating today?

        I wanted something like junk food, but with less guilt, so I made some vegan nacho cheese and a serving of corn tortilla chips for dinner. 😄 Mid day "snack" was the leftover oven roasted kohlrabi I made last week -- still delicious!

              I coerced hubby into doing the kids' activity pickups and dropoffs tonight, so I get to make dinner that actually requires prep! I'm doing Creamy Balsamic Chicken Thighs and Mushroom Pilaf (with brown rice, and wild-picked mushrooms, and maybe some peas.) Plus a side salad of course...possibly with extra ingredients like broccoli and kale and cranberries, and a nice vinaigrette...

                Beef barbacoa tacos - haven't been buying or cooking meat in a long while. Tasty! Everyone had corn tortillas but I 86ed them.

                  Beef stir fry, if DH gets home soon. If not... I dunno. Leftover soup maybe. I don't feel like chopping things tonight. Maybe I'll just eat popcorn. Actually that sounds awesome. Popcorn and tea.

                    Today for lunch I needed to use up my leftover brown rice and wild mushroom pilaf. So I fried it with some minced ginger, some frozen/defrosted peas-n-carrots, some soy sauce and sriracha seasoning and lime juice, then tossed it with diced avocado. Because avocado. It's surprisingly tasty!

                      Yesterday was greek-marinated chicken drumsticks and quinoa pilaf. I'm really sick of the fact that every quinoa recipe ever has too much liquid in it. I hate soggy quinoa. I need to remember to never add as much liquid as they call for. The Greek chicken was amazing though, lots of lemon, parsley, and garlic in a green yogurt marinade. Today is pork tenderloin with roasted butternut squash, in either quinoa or brown rice pilaf, I can't remember which.

                      My one issue with the Fresh 20 so far is that we're eating way more meat than before. I need to cut it down and start modifying the recipes to put the sides front and center.

                            I googled "spaghetti squash ingredient recipe" and one from a website named Cookie and Kate popped up.
                            I'm doing my own take, because cabbage doesn't sit well with me right now (&#128517: sautéed onion, carrots, diced tomatoes, sliced jalapeño, black beans, and garlic. I'm going to make some sort of avocado yogurt sauce, I think.

                              I made this recipe today, chicken enchilada casserole, I couldn't help but add some more cheese though haha. One for now, one for the freezer for our road trip next month!
