  • Quiche--where did I go wrong?

    I made a quiche last night that was pretty good but seemed to have liquid in it when I cut into it. I guess it cooked off of the veggies in there (I chopped up and sauteed red bell pepper and carrots and then added leftover cooked broccoli and some deli meat). It was a great way to use up leftover produce and deli meat, but I'm wondering how I can avoid having it turn out so liquidy. The egg was fully cooked, btw. Any suggestions?

    Sue, I'll bet it was the water from the veggies. I've had that happen before and I just blot it off the top with a paper towel. You can also try to squeeze out any water before you put it in the filling. It can also happen if you overcook the egg.
    Sounds like a yummy way to use leftovers!

      I think you're right. I did pour off the liquid and when we stuck it in the oven to re-heat it actually tasted better on the second night!
