  • Good Crock Pot recipes

I realize in some people's minds "Good Crock Pot recipes" might be an oxymoron, but I've found a few keepers and would love to have a few more.

Here's my fave - please share yours!

    Barbeque-Beef Sandwiches from Cooking Light

5 T dk brwn sugar, divided
    3/4 t blk pepper
    2 1 pound flank steaks
    1 c chopped onion

3 T Worcestershire sauce (in my family we call it "woo secret")
    3 T molasses
    3 T cider vinegar
    1 T chili powder
    1 t garlic powder
    1 t dry mustard
    1 t ground cumin
    1/2 t salt

Add steaks, turn to caot. Cover with lid; cook on high-heat for 1 hour. Reduce heat to low; cook for 7 hours. Remove steaks; reserve sauce. Shred steaks w/forks. Return shredded steak to cooker; stir into sauce. Spoon onto buns and EAT!

      I love my crockpot!

      Tonight we had stuffed peppers:

1/2 lb turkey sausage, chopped (I cut off the casings and kind of tear them into chunks and throw them in the bowl)
      1 med. onion, finely chopped
      1 11-oz can corn, drained
      2 slices toasted bread, cubed
2 T chopped fresh parsley (I use dried)
      1/2 t. salt
      1/8 t. ground black pepper
1/4 t. dried thyme (I throw in more than that)
2 med. tomatoes, seeded, peeled, and chopped (I just chop 'em)
3 large red or green bell peppers, cut in half lengthwise and seeded

Mix all ingredients except bell peppers together in a large mixing bowl. (Mix it kind of a lot, and smush it around with the back of the spoon, so the sausage kind of homogenizes in with the other ingredients like a crumbly meat loaf.) Spoon into pepper halves. (I just use my hands and kind of pack it in there.) Arrange on bottom of a 3 1/2 quart slow cooker, stacking if necessary. Cover and cook on LOW about 5 hours or until peppers are tender. (ours only took about 3 hours, and I use a baster to remove excess liquid from the bottom of the pot about once an hour)

I recommend the book Healthy Crockery Cookery by Mable Hoffman. We like a bunch of recipes out of there.

Another one that's easier and cooks all day (prep the night before, pull it out of the fridge in the morning and turn on, ready to eat after work)

      Double-Corn Stew

2 ears corn (I just use a can of corn)
1 14-oz can golden hominy, drained
      1 med. onion, chopped
      2 med tomatoes, chopped
      1 14.5-oz can chicken broth
      1/4 teaspoon black pepper
4 to 5 oz hame steak or baked ham, coarsely chopped
      Chopped cilantro

Remove husks and silk from corn. Cut off kernels and add to a slow cooker. (Uh, where's my can opener . . .) Stir in hominy, onion, tomatoes, broth, pepper, and ham. Cook on LOW 5 to 6 hours or until vegetables are tender. (This is fine for at least 8 hours. I also thicken it 15 minutes before serving with a spoonful of cornstarch dissolved in a few tablespoons of water.)

Ladle into soup bowls, sprinkle each serving with cilantro. [/i][/b]

Too lazy to actually post a recipe, but I love my "Fix It and Forget It" cookbook. I use it for ideas all the time!

here's one from a friend of mine. i've not tried it, but she swears it's great.

          1 pound ground beef
          1 onion (chopped)
          1 package of taco seasoning
          1 can of chilis
1 can of diced tomatoes (undrained)
          1 can of rotel (undrained)
1 can of kidney beans (undrained)
          1 can of corn (undrained)
          fritos
          cheese

brown the beef and onion. Throw everything in the
crock pot. (except for the fritos and cheese). Heat

Pour in a bowl over the fritos.

fyi - tried the taco soup on Halloween and it was awesome. I wasn't hoping for too much b/c of all the canned stuff going into it - but it was really great.

I just bought my first crock pot and so far I've made French Onion soup, a bean soup and right now I have South Carolina style pork bbQ in it. I also bought a book called 'Not you Mother's Slow Cooker" or some such thing. I haven't made anything from it yet but it looks great.

                OK-

I'm a convert! It is so great to get everything together and then walk out the door knowing that my dinner is on it's way!

So, I got this from the Saving Dinner people, but kind of modified it:

1 can salmon (or you can use fresh or frozen- 16 oz)

                1.5 cups cauliflower

                2 cups brown rice

                half a beer

                8 oz. milk

                3 cups water

                1 cup grated parmesan

                1 tble fennel seed

                salt and pepper to taste

toss together and then cook- they say for 8 hours, mine was done at 6. Then stir in a can of chopped tomatoes and 2 chopped green onions for the last 30 minutes. I'm using my last few fresh tomatoes though.

I also gave it to Nikolai without the tomatoes (he's not a fan) and he LOVED it. Man this kid will eat fish.

I made up a soup recipe this week based on what I had in the pantry and using guidelines from a crockpot cookbook that I just love....."Fix It and Forget It". They recently came out with "Fix It and Forget It Lightly" which I am hoping to get for Christmas. I can get sick of crockpot meals really fast, and by spring I am more than ready to put the thing away for several months, but when it is cold out, there is nothing like coming home to yummy smells and a warm meal ready to go.

I make a version of the taco soup with chicken. We don't like it as soup, so I add rice for the last hour. (I got the recipe from AllRecipes originally.) We have a 7 qt crockpot and since you are supposed to fill it at least 1/2 way (?) I always have a TON of left overs. This taco soup recipe freezes well.

                          Here is my version:
                          3 frozen chicken breasts
                          2 cans canned tomatoes
2 cans beans (I use black and dark red kidney)
                          frozen corn (eyeball appropriate amount)
1 package (low sodium) taco seasoning mix
                          1 medium-large onion chopped
1 can of chicken broth (or enough to fill slow cooker at least half way)

I add a cup of dry rice for the last hour.

I also wanted to add this website:

I'd love to find creamy soup recipes that don't use "cream of" cans.

The potato soup recipe I posted in the other thread....I made that in the crock pot.
