We have almond milk (unsweetened, vanilla) for protein shakes and cereal.
We use organic 1/2 and 1/2 for coffee.

Love me some almond milk; it's primarily what I put in my cereal. I prefer it over soy.

Loooove coconut milk. So glad that it is in style now because you can get it anywhere. It reminds me of my childhood. My grandmother was crunchy before crunchy was in. She was ms organic/naturapath before those names were even created. Growing up she'd make coconut milk (and tell us all the health benefits ). I remember it was labor intensive - something I'd never take the time to do. I like the almond too but not as much as the coconut.

That is so awesome! I'm just curious. How did she make it? Not that I'd try it but I'm just wondering. It's really widely sold now. I think someone told me even walmart sells it way out here. I posted this on FB but I cracked up when I let DD try it. She said Yumm! Chocolate! I guess it tastes sweet to her and she thinks its chocolate.

Crack open coconut, drain water, scoop out "meat", grate it (although I'd use a food processor - she did it manually), add water back to the meat mush, strain (through cheese cloth if you do not want any coconut meat bits) little at a time to squeeze out all the "milk". Yes, a whole lot of work.

Was this done with a fresh (green) coconut, or with the dried variety that I typically see in the stores?

How much milk could she get out of one coconut?

I know she used some green (more water) and some a little older (more meat). Not sure about the one at the grocery store because she did not get them from the "regular" store. She always said they were too old. She got them at the same store where she got all her other all natural goods - AND this was in south Florida where they are more abundant. However, I have noticed that they now have young coconuts being sold at the grocery store as well as those brown/dried ones we have always had...and this is in podunk-ville nowhere near a coconut tree.

Ounces-wise, I really do not remember because I did not pay attention with how much she started withs vs how much it would yield. I do remember her filling one of those large red pyrex measuring cups...so 4 cups? She always mixed the "milk" with fruits to make smoothies. I do not remember using it for cooking. I also do not remember how long it can keep because I do not know that she ever kept any for later.

There was a concern those chemicals would go right into the milk but I don't really know much about that topic. Does anyone know how safe almonds are or how I could get around this concern?
