  • Stump the Chef: Vacation Meal Ideas

    Hi All,

Max and I are going to Hawaii for my step-mom's family reunion over Thanksgiving. We saved all last year for the tickets and I'm SO excited. We leave on Friday for 8 days and my Dad and Stepmom agreed to pick up our share of the timeshare where we're staying so we can afford to attend. Anyway, as a small token of our gratitude, Max and I have agreed to cook 2 nights while we're there (other people are assigned other days). Wondering if anyone has any bright ideas.

    Things to keep in mind:
    1) I have to feed 8-10
    2) Food is 4x more expensive so fancy ingredients are out
    3) A grill and oven are included plus a few assorted pots and pans but fancy kitchen utensils will not be available
    4) I want to use everything I buy so expensive sauces or things I can't use completely are less attractive

I've made kabobs before but Max doesn't want to do that again (why? I'm not really sure. He just doesn't). I'd love to use local ingredients like pineapple or something and obviously my winter recipes are out because we're in the tropics. Anyway, let me know if you guys have any bright ideas!

    Thanks!

How about marinating some chicken Breasts in Paul Newman's Balsamic Vinegarette all day long before throwing them on the grill? Not too spendy, quick, good, and easy. We make this at my parent's cabin after boating all day long and it hits the spot. You really don't want to spend to much time in the kitchen in Hawaii, no?

You could marinate and grill fresh local fish, maybe? Last time I was in Hawaii with family, my uncle grilled...it was either Mahi Mahi or Ahi (or both). Teriyaki is always good for marinating, and easy, too - (I just mix soy sauce with a little sherry, sugar, and ginger)

Which island? I would keep it simple and find a local fish market and grill with some rice and veggies. If you like tropical fruits, you could have papaya or pineapple etc for dessert. I love the Wizard Publication guide books for Hawaii -- if you can buy or library a book before you go, you should be able to find fish market recs in there.
