One of my quick "go-to" recipes is shrimp marinaded for about 30 minutes in a mix of Sriracha and EVOO with some salt and pepper. Cooked in a pan or in the oven. Easy, spicy, yummy. We do them as tacos or with rice and veggies! I didn't get out to the grocery store, so DD and I will either have mac and cheese or pasta with a jar of sauce and canned green beans

Tonight was pasta with leftover sausage diced up into to, tossed with olive oil, a bit of the pasta water, herbs and salt. Easy peasy.
Tomorrow, is black beans and rice... I'd better get some black beans! Toss a bag of beans into the crock pot with a couple of bay leaves, cumin and some sort of smoked pork. I usually use hocks or shoulders, but I found some smoked pork neck at a mexican market this weekend and am looking forward to using that. The marrow should help make it really rich! I just eyeball the water level and add more as need to keep it at a thick stew level.Kris
