Last night I made a variation of these Rachel Ray Nachos. I used soy crumbles instead of meat, and did some cheats on the other stuff, but over all the same idea. It was so pretty on my and DH's plates. Instead of putting it in a serving dish I just plated everyone's. It was delicious and eye candy. Tonight Pizza after softball with the residents. I made one of Giada's versions of spaghetti and meatballs -- bucatini all'amatriciana with spicy smoked mozzarella meatballs. It was a little time consuming but dang was it good. Like I-could-charge-$25-a-plate-for-this-in-a-nice-restaurant good.Wife of a surgical fellow; Mom to a busy toddler girl and 5 furballs (2 cats, 3 dogs)
