      Last night I made a variation of these Rachel Ray Nachos. I used soy crumbles instead of meat, and did some cheats on the other stuff, but over all the same idea. It was so pretty on my and DH's plates. Instead of putting it in a serving dish I just plated everyone's. It was delicious and eye candy. Tonight Pizza after softball with the residents. There goes my healthy eating this week.

        I made tofu scramble w/beans and baked home fries served up in a tortilla.

          I made one of Giada's versions of spaghetti and meatballs -- bucatini all'amatriciana with spicy smoked mozzarella meatballs. It was a little time consuming but dang was it good. Like I-could-charge-$25-a-plate-for-this-in-a-nice-restaurant good.

            Leftovers - he had red beans & rice, I had Greek food. We're so unoriginal!

              Eh, for me and the kids tonight I made baked chicken breasts with a sprinkle of seasoned salt, boxed brown & wild rice, and a salad. It's pronounced, "Goor-MET."

                  Cleaning out the fridge/freezer before we head to the Armpit so last night it was TJ's breaded cod filets with some frozen french fries and a half bag of frozen onion rings. (On no diet plan, anywhere. Tasted good though)
