Id go with stainless. Mine work with magnets. I'm not a big fan of black appliances and right now I think there is too much white.

Is go stainless too. Not sure if those cabinets are high enough quality to restain. You could try on one and have a backup plan

I would not go stainless unless you loooove the look of stainless. I chose a SS fridge now because that was my only option given that the other appliances were stainless. I think it looks fine BUT I hate the fact that my kitchen looks like a trend. I am sure avocado green looked ahhhmazing at one time too. At our last house, we remodeled the kitchen with new paint, counters and appliances. I loved that the white fridge and ovens blended into the cabinetry. We always got compliments and our buyers asked us to leave the white fridge for that same reason.

If you love the look of SS, go for it. But do not go for it just because it is the "it" thing now. I would go with whatever color makes your kitchen look the way you want it to...so, it could be black/white/SS or the new but old looking appliances in avocado, turquoise, etc. I saw a retro kitchen with those that looked gorgeous - especially since it went with the age of the house...not just trendy.
Finally - we are finished with training! Hello real world!!

Thinking of doing this to all the oak cabinetry:

Great idea. Could you do it a medium wood color or does it have to be dark to work?

I did it with an oak table and chairs and loved the way it turned out.
I had to sand them lightly because they were heavily varnished but I doubt cabinets would be. I used a cherry stain, which highlighted the grain but gave good coverage too. I think the stain would be more even without sanding.
