        Okay here are two that I really want to make:

        1. Sweet Potato Agnolotti with Sage Cream, Brown Butter, and Procuitto. Page 81

        2. Roulade of Pekin Duck Breast with Creamed Sweet White COrn and Morel Mushroom Sauce. Page 172.

            I have to look through the book to pick!!! I have clearly spent way too much time on these F%$#ing pictures. I really did enjoy making it, b ut I wouldn't make it again. For me it was just OK.

                    I'll go check those out and vote -- or put them in rank order. They all sound good, especially the ravioli (or agnolotti? the sweet potato thing).

                    A note on the truffles, as long as they aren't an integral ingredient, I will still make the dish and leave those out. A drizzle of truffle oil is not a problem. But scrambled eggs with truffles and truffle oil drizzled on top I just couldn't do. And I am ok sitting one out.

                    I agree with your comment about Heidi that the soup would be great as a bread pudding sauce. I think it would be fun to do a deconstructed bread pudding dessert with the bread pudding and serve as a soup rather than sauce. In my spare time...

                      In order of preference:

                      1. Sweet potato agnolotti
                      2. Pan Roasted Sea Bass (is that one of the over-fished fish? I might sub a different kind)
                      3. Duck Roulade (partly because it calls for corn and I can't get fresh corn on the cob right now. My husband would be a very happy man if I made this).

                        Of these I have no preference, I'll go with whatever you guys want. Just let me know. Since we are going to make every recipe, it doesn't really matter to me what order.

                          I really don't think we are going to make EVERY recipe, are we? There are a few in there that are CRAZY hard/expensive. I want to make a lot of them, but I don't think we are going to get to every one. Have you seen the pigs head one, or the one where you need to butcher a lamb? Foie gras and caviar are not cheap.

                          Jenn and Nellie, do you have any suggestions for the next dish? Have you looked at any. I agree with you, Nellie, about the corn for the duck dish, and I hadn't even thought of that, after I ranted about availability of fresh ingredients. If we do decide to do the sweet potato agnolotti, I'm all over that.

                          You both need to pick a few that we can talk about!!

                          I'm ready to start thinking about the next dish, even if I don't make it until the end of February. Who knows? My next three weekends are shot. Myrtle Beach for Ryan's birthday this weekend. Duke Fellowship interview next weekend and Tampa fellowship interview the weekend after that.
