              Cool. I guess that's what we'll do then? It's going to be hard for me to get this in this month, but I'll just have to find the time. Between fellowship interviews, babysitting, and everything else, I don't know when I am going to find the time, but I am so excited to make this.

                    The sweet potato dish is still on my list. Maybe this Sunday. I probably better go read through it and see what I need to start doing today.

                    I found one I would like to make. It sort of doesn't count because it is a staff meal and not the usual FL but how about Eric's Staff Lasagne? I think the oven roasted sauce sounds yummy. (p 116)

                      Well, I am ready to discuss the Sweet Potato Agnolotti.

                      This dish was not hard, but not easy either. Mostly it was hard because I am tired, and I am a retard at making pasta.

                      First we started with the sweet potatoes. I did the sweet potatoes the day before the rest of the dish and stored the filling in the fridge until tonight. I roasted them in the oven with butter and then ran them through a tamis as opposed to the potato ricer, because it kept sticking and making a big giant huge mess. The tamis took forever, but worked well. Added the bacon. I don't think I diced the bacon fine enough which became a PITA when it came time to pipe the filling in the pasta.

                      Here are the sweet potatoes:




                      Then, I made the pasta dough and did a little well and stirred with my fingers.



                      Once I kneaded and kneaded and kneaded forever and ever and ever, I ended up with some nice dough.




                      Then I refrigerated it. Waited a while. Talked to more recruiters on the phone, etc.

                      Then I rolled it out and began filling. Yeah, so I suck at this, but they didn't turn out too bad, I think.









                      Then I got started on the sage cream with the Buerre Monte and chopped the sage in the blender. Once the Buerre Monte came together, I mixed it with salt and creme fraiche, and then I added it to the blender.







                      After blending the sage cream, I strained it back into the pot:





                      I browned some butter. Wow, all butter should be browned, forever and ever more. MMMMMMMMM



                      I boiled the pasta, julienned some prucuitto, and fried some sage leaves, and this is what it looked like all put together:



                      This was freaking incredible. It was absolutely lick the plate, delicious. It was a complete PITA, but I will make it again, and maybe I'll even get better at pasta next time, but absofreaking incredible. Yum. Run away with me, sweet potato agnolotti, and don't tell anyone...I want you all to myself. It is all gone. Chad and I didn't let the kids have any, and we fought over every last piece of pasta and drip of brown butter. It was sweet and salty and buttery and creamy, and I can't wait for you to try it!!!

                        :wee: Thanks for the pep talk! I'm ready to go on this one. Hopefully we will have it soon. And by soon I mean within 10 days.

                        That looks delicious Heidi. Great photos too. I agree about the browned butter. I made some browned butter dessert a while back and O...M....G....

                            Ok, Heidi. I have completely dropped the ball on this. Today is slated to be in the mid-80s with warm weather through the weekend and the agnolotti doesn't sound good for such hot weather. If it cools off, I'll come back to it.

                            What should we go to now?

                            I can't believe I have had this on my list since February and it hasn't happened.
