    Re: The French Laundry

Now I'm tempted to get more walnuts and another pear! Is it really worth making?

      Yes, it is, IMO.

The first bite, I was like "eh, that was a lot of work" and then the flavor starts to sink in. It is different because it is subtle and not sweet and not a huge hit of flavor up front. The kids liked it too. A glass of port with it makes a perfect after dinner treat. I took a photo I'll post in a bit.

Here is my parchment lid. Think I could get an internship at TFL?

Final product (which is now completely gone btw ):

I can't say that the walnut oil added a whole lot.

            Simmering the walnut cream

The pears are done poaching. I used a regular pan lid. My pear was very ripe from being ready to make this recipe for such a long time, and did not take long at all to poach.

The finished cream in the pan coming up to heat. It has bean strained already.

            Walnut and vanilla bean carnage.

Overall, I didn't think this recipe was that hard to make. Really, and I think it is worth it to make it once, but I won't make it again. It just wasn't sweet enough for me, but it has a very unusual and intense walnut and pear flavor, bitter a bit. I can see how some people would be in love with it, but I do think it would be better as a bread pudding sauce for a really sweet bread pudding.

No pictures finished in the glasses. I don't have anything that cute.

I still have leftovers, unlike Nellie. My kids didn't really go for it at all.

I did not use the walnut oil. I didn't buy any. I figured the few drops on top weren't worth the price tag.

I agree that it wasn't hard to make -- once I started making it! But geez, I had the hardest time squeezing that in. I made the poaching liquid a week and half ago.

What did you think about that final pass through the strainer? I didn't get anything worth straining out.

I would make this again, probably for guests.

I actually got some pear pulp, and I was skeptical, and even thought of skipping that step, but I did end up thinking it was a good idea.

I know Luanne and Jenn aren't done yet, but it's time to pick the next dish. So, how do we do this? We have a few options as I see it:

We can pick on rotation and each take turns.

We can each pick a few, 2 or 3, we'd like to make and then discuss them.

We can each pick two, PM them to me, and I will put up a poll in which IMSN can decide what we make next.

What do you all think? What do you want to do? Let's keep in mind when we are choosing that some of the recipes will be really hard to do without fresh summer ingredients and Nellie hates truffles.

I made it last night. I just finished uploading my pics to Photobucket and I'm trying to remember how to get them here.

I was going to ask that, Heidi, how do we pick what is next? I'll defer to you on choosing because I haven't had a lot of time to look.
