Made the orange chicken tonight--2 thumbs up for DH and it was super simple to make. Definitely will be making it again! I think I will use only orange juice, too, next time, though. It was on the overly sweet side.

Costco's ploy won me over. I bought the Chicken Tortilla Soup they were giving samples of on Sunday. Its so yummy. We had it for dinner tonight.

Yesterday I made a yummy comfort food casserole. I cooked collard greens for approx two hours, seasoned perfectly. I made a large pot of cheese grits, and I sauteed a pound of chorizo (spicy) sausage. I layered grits, greens, sausage, grits on top, sprinkled with cheddar and baked 30 minutes!!!! This good for breakfast, lunch, and dinner!

Ugh. Tonight is Lego robotics, so dinner will be whatever quick and easy crap the parent in charge of dinner will be bringing. We end up with a LOT of pizza and tacos. I always eat before we go.

I just put 4 chicken breasts in the slow cooker. Will serve with rice maybe. Or pasta.

This is what we made last night - an old family favorite:

1 lb ground sausage (usually a sweet Italian, although we're going to try turkey sausage next time)

                            Brown over med-high heat.

                            2 big sweet potatoes
2 big apples (or 6 small apples from the farm share as the case may be)

Peel and cut into slices or small chunks.

                            1 cup water
                            1 tbsp flour
                            2 tbsps sugar
                            1/2 teaspoon cinnamon

                            Mix together with a fork.

Put everything into a baking pan, pour the water mixture over the top. Cover and bake at 375 for about 45 minutes to an hour until the sweet potatoes are tender.

Tortillini & Broccoli Alfredo tonight. Probably pot roast tomorrow - it's DrK's birthday but I have a 6pm meeting at the day care and it's Simcha Torah too. Busy night. I'll be baking mocha cupcakes tomorrow also. (Cupcakes so he can take the leftovers to work.)
