    Tofu & udon noodles with sesame peanut dressing.

      Floor pasta.

      Had a beautiful dish full of pasta to be baked cheesy goodness...as I went to put it in the oven, I dropped it all over the floor. It had expensive fresh mozzarella in/on it too...so bummed.

      So, oatmeal cookies.

        I made some beef burgers with a jalapeño and cream cheese filling. Super yummy and easy. Also had steamed broccoli on the side. The only thing was we had a snack attack night and ended up getting a bunch of candy, chips and ice cream...eeks!

          We had dh's welcome home dinner, finally. Filet w/green peppercorn sauce, bernaise sauce and chimichurri, whipped potatoes, caesar salad, corn on the cob, and a table full of whining kids.

                  Chicken and dumplings, mostly already prepared. I have a once-a-month cookbook that we did about a month ago. It's been so nice having meals ready in the freezer!

                        We've only done one two-week cycle from it so far. It's actually lasted us over a month, with call nights, leftovers, and eating out occasionally. It's pretty good, and the only one we didn't really like was a cod dish that I think would be really good with a different kind of fish. It has varying serving sizes, so you can use some if you have company.

                              DH is back on his fruits and veggies only kick, so I'm sure I'll be making homemade hummus and chopping up fresh veggies for dinner.

                                Sloppy Joes (homemade sauce) and potato salad. Easy and I won't have to heat up the entire kitchen since it's 100 degrees outside.
